You should stop trying to pick him up for starters. If you just got him then he's still adjusting to his new environment and is probably very on edge. Leave him alone for a few days so he can get comfortable. Then you can try to feed bits of food so he knows you're not a threat and also so he can get used to your scent. After a while you can try to reach in and pet him but if he tries to bite leave him alone for a while. The best time to try to pick him up is right when he wakes up because he'll be groggy and less defensive. Good luck!

Give your hamster some time to chill. Let it just chill out + explore it's surroundings. During about the 2nd week of owning him/her then put a yummy treat for him in your hand and gently place your hand in the cage. Do not force it toward them. Be patient and let him come to you. Soon he will sniff you, and eat the treat. Don't be surprised if it dosen't work the first few times.. and do this daily at the same time every day. Once you think he is accustomed to your hand hold your hand out without a treat and when he comes to you pick him up. You must pick him up daily so he becomes tame and make sure you are very gently. After alot of patience and dedication, your hamster will become very tame. (:
