Super old topic, but I'll answer anyway!
Definitely have someone hold her while you work with her feet.
If you press her chestnut it will encourage her to unlock her knee which will make it easier for you to get her foot up. You can put pressure on the chestnut or on the back of the fetlock to ask for her to pick it up. If she moves it, hang on. Wait until she calms down, and when she does, let go of her foot. Then go again. Ask for her to pick up her foot. If she is relaxed, let it down. Go again. This time hold the foot, rub her leg, her fetlock, her stomach, pat the bottom of her hoof, or pick it out.
I used to lean on them to get them to do that, but the idea is to get them to do something with as little effort on your part.
